Biogenic amines are a group of neurotransmitters that have a nitrogen base. They function as neurotransmitters in the central and peripheral nervous systems, playing an important role in regulating mood, emotions and sleep patterns. Biogenic amine neurotransmitters such as dopamine are considered to be protein molecules because they also serve regulatory functions like enzymes do in other cellular processes.
Biogenic amines can also be found in fermented foods like cheese and soy sauce. When biogenic amine neurotransmitters get broken down, they release hydrogen cyanide as a by-product. This is why the central nervous system degenerates so rapidly when it is deprived of oxygen – this poisons the brain cells with HCN gas if not enough oxygen gets to them quickly enough! Some Biogenic Amines which are protein include: dopamine, histamine, serotonin, epinephrine (aka adrenaline), melatonin and tyramine.
